Lately life has been busy, I know you’re shocked….but seriously guys- dinner still needs to happen every darn night and sometimes you need something super healthy because you can’t just eat junk and you need it to be something fast. Here is my go-to dinner: FANCY RAMEN! You can use any noodle, I just like ramen because it cooks in three minutes, but you can use any noodle you love!
Fancy Ramen
Serves 9
9 packages of ramen, cook as directed
2 heads cauliflower, chopped
2 bunches asparagus
2 large yellow onions, sliced
Place cauliflower on well oiled baking sheet with curry powder, salt, pepper, and dill. Bake at 400 degrees for 15 minutes or until tops are turning golden. Turn oven to broil and cook asparagus for 6 minutes on High. When the tips are crunchy looking you’re good! Fry onion slices in skillet until caramelized.
Place cooked veggies on top of ramen, enjoy with Sriracha. Or just eat as is!!
Other ideas:
🍝Mushrooms, cabbage, onion.
🍝 carrots, beets, sweet potatoes.
🍝Broccoli, onion, parsnips.
There are endless varieties of veggies you could try!!
